Server

Duties and Responsibilities

  • Provide friendly, responsive service to create an exceptional dining experience for all customers. Each server’s primary objective is to show our guests such a wonderful time, they will want to return.
  • Observe customers’ dining experience to ensure customers are satisfied with the food and service, and respond promptly and politely to correct any problems.
  • Collect payments from customers.
  • Write customers food orders in a notebook or memorize orders, then put orders into computers for transmission to kitchen staff.
  • Prepare checks that itemize and total meal costs and sales taxes.
  • Check customers identification to ensure that they meet minimum age requirements for consumption of alcoholic beverages.
  • Serve food or beverages to customers, and prepare or serve specialty dishes at tables as required.
  • Present menus to customers and be able to answer questions about menu items, beverages, and other restaurant functions and services.
  • Inform customers of menu changes and daily specials, and make recommendations you think that the customer will enjoy.
  • Clean tables or counters after customers have finished dining, and make sure your working area is clean at all times.
  • Prepare hot, cold, and mixed drinks for customers.
  • Set up silverware and plates, and food stations. Also set up dining areas to prepare for the next shift or for large parties.
  • Prepare tables for meals, including setting up items such as plates, silverware, and glassware.
  • Stock service areas with supplies such as sauces, napkins, utensils, and others.
  • Explain to customers how various menu items are prepared, describing ingredients and cooking methods.
  • Remove dishes and glasses from tables or counters, and take them to the kitchen for cleaning.
  • Answering phones to take reservations or to-go orders, and by greeting, seating, and thanking customers.
  • Perform cleaning duties, such as sweeping and mopping floors, tidying up server stations, taking out trash, and checking and cleaning bathrooms.
  • Thank guests for their visit and invite them to return.
  • Attend all scheduled employee meetings and offer suggestions for improvement.
  • Coordinate with colleagues to meet customers’ needs and support the operation of the restaurant.
  • Assist colleagues where needed to ensure guest service standards and efficient operations.
  • Upselling additional products when appropriate.
  • Communicating order details to the kitchen staff.
  • Execute all side-job duties as assigned by management.
  • Providing customers with information about local areas, including giving directions.
  • Responsible for making fresh spring rolls at the beginning of the shift.

Qualification, Skills and Work experiences

  • Prior experience as a server is a plus.
  • Candidates will have a California food handler’s Certificate, and must be eligible to work in the United States.
  • Be able to read and speak English fluently.
  • Must showcase teamwork and communication skills.
  • Must be able to multitask and act quickly.
  • Must be able to handle money transactions responsibly.
  • Must be flexible and ready to work in shifts.

                             Server Side jobs

Getting start

  • Wash the yellow towels, and wipe all tables, counters and food packing areas.
  • Prepare tables for meals, including setting up items such as plates and silverware.
  • Making hot water, tea, and preparing cups of water.
  • Counting cash change in the register to $200.
  • Set up outdoor tables for dinner shifts only.

During the work

  • Preparing sauces such as BBQ sauce, sweet & sour sauce, hot sauce, and fresh spring sauce.
  • Prepare rice boxes, togo boxes and plastic bags.
  • Prepare cups of water as needed.
  • Refill the water, and tea for the customers.
  • Remove dishes and glasses from tables, and take them to the kitchen for cleaning.
  • Clean tables and chairs after customers have finished dining, and set up new plates and silverware.
  • Polishing silverware and wiping dishes after cleaning.
  • Prepare new plates and silverwares.

Finishing Work

  • Close the patio section, and pack everything up to the right of the patio.
  • Perform cleaning duties, such as sweeping and mopping floors, tidying up server stations, taking out trash, and cleaning bathrooms.
  • Refill drink, beer, wine in the refrigerator.
  • Refill togo boxes and paper bags.
  • Clean up folders and menus.
  • Soak the yellow towels in the Clorox bleach.
  • Adjust credit card tips.
  • Counting cash change in the register to $200, and prepare for closing the account.

***Last call for dining is 30min before the restaurant closes.

Hostess

Duties and Responsibilities

  • Provide friendly, responsive service to create an exceptional dining experience for all customers.
  • Prepare water, hot, and cold drinks for customers.
  • Refill water for customers at the table.
  • Serve beverages to customers.
  • Wiping glassware after cleaning.
  • Helping customers with pickup orders, and making a payment as needed.
  • Manage Reservation and Wait List when the restaurant is busy.
  • Execute all side-job duties as assigned by management.
  • Assist server where needed to ensure guest service standards and efficient operations.

  • Prior experience as a hostess is a plus.
  • Be able to read and speak English fluently.

PACKER/
Runner

Duties and Responsibilities

  • Packing togo order
  • Confirm and adjust pickup time for online order
  • Serve food to customers as needed.
  • Remove plates, silverware and glassware from tables, and take them for cleaning.
  • Clean tables after customers have finished dining, and make sure your working area is clean at all times.
  • Wiping plates, silverware and glassware after cleaning as needed.
  • Helping customers with pickup orders, and making a payment as needed.
  • Stock packing areas with supplies such as sauces, togo box, container lid, and others.
  • Execute all side-job duties as assigned by management.
  • Assist server where needed to ensure guest service standards and efficient operations.

Kitchen Helper/ Dishwasher

Duties and Responsibilities 

  • Properly wash dishes, glassware, silverware, cookware, and storage containers.
  • Sets up dish stations, including dish machines and sinks.
  • Assists in food preparation and any other duties set forth or requested by the chef as needed.
  • Comply with nutrition and sanitation regulations and safety standards.
  • Maintain a positive and professional approach with coworkers.
  • Be able to work under pressure and time deadlines during peak periods.
  • Be able to control the quantity and quality of food as well as keep track of inventory and supplies.
  • Be able to restock items and keep the working area clean as needed throughout the shift.
  • Track record of strong work ethic, high sense of responsibility, positive attitude, dependability, ability to communicate effectively and good teamwork.

Chef/

  • Cook and prepare food following recipes and direction of the restaurant.
  • Comply with nutrition and sanitation regulations and safety standards.
  • Maintain a positive and professional approach with coworkers.
  • Be able to work under pressure and time deadlines during peak periods.
  • Plan and direct food preparation and culinary activities.
  • Be able to control the quantity and quality of food as well as keep track of inventory and supplies.
  • Be able to restock items and keep the working area clean as needed throughout the shift.
  • Track record of strong work ethic, high sense of responsibility, positive attitude, dependability, ability to communicate effectively and good teamwork.
  • Receive, inspect, and stock deliveries of food stuff and restaurant supplies as needed.
  • Execute all side-job duties as assigned by management.

 

Qualification, Skills and Work experiences

  • Must have 2-4 years experience working as a chef within a Thai Restaurant / Knowledge of Thai Food. 
  • Candidates will have a food handler’s license, and must be eligible to work in the United States.
  • Must speak and read English/Thai well enough to understand instructions
    and ask questions.

Hostess workflow

1.Greeting everyone who walks in. For example, Hi, welcome in.

2.Asking for assistance like how may I help you?

3.If they say I’m here for PICK UP, ask for order name or phone number

3.1 If they are drivers from Doordash, Uber or Grubhub. 

      Then you go check if the order is ready. If it’s ready, bring it to them. 

      Before handing the order, make sure you hand the drink that comes with it.

      If the food is not ready, you ask the packer for how long it is going to take. 

      Then you come back and tell the driver. When the order is ready, 

      the packer will let you know. You may offer them a cup of water or hot tea.

      If there’s a table available, you can offer them a seat while they’re waiting.

3.2 If they are a customer, ask them if it is an online or phone order. 

      If it’s an online order, then you go check if the order is ready. If it’s ready,

      bring it to them. Before handing the order, make sure you hand the drink 

      that comes with it. 

      If it’s a phone order, let the customer pay for their order first. Then you go 

      check if the order is ready. If it’s ready, bring it to them. Before handing the 

      order, make sure you hand the drink that comes with it. 

      If the food is not ready, you ask the packer for how long it is going to take. 

      Then you come back and tell the customer. When the order is ready, 

      the packer will let you know. You may offer them a cup of water or hot tea.

      If there’s a table available, you can offer them a seat while they’re waiting.

4.If they say they are here to DINE IN.

4.1 Ask for the reservation first.

      If they have a reservation, confirm on the tablet and seat them at the assigned table.

      If they don’t have a reservation, ask them how many people there are. 

      Then seat them if you have a table available.

      If they don’t have a reservation, and you don’t have a table available. Ask them to 

      put their name on the waiting list, and notify them when you have a table available.

4.2 Please seat customers at the proper table.

      Ask them to follow you to the table, and bring them the menu.

      After seating, bring them some water.

5.Manage the reservation by working together with the server.

6.Bring the check, make a payment and bring it back to the table.

7.When you are free, you can perform side jobs.

  • Prepare cups of water, tea or any drink if it’s necessary.
  • Make to-go drinks. For example, Thai ice tea. 
  • Refill water at the table.
  • Dry the glasses after being washed, and put them back in place.

Server workflow

  1. After customers are seated, the server will come to the table and welcome customers. Introduce himself, have a small talk and give customers a quick tour of the menu. As well as, recommend them to try our special menu. 
  2. Before leaving the customers with the menu, ask the customer about any drinks to start with. For example, Would you like a drink to start? We have Thai iced Tea, fresh young coconut, beer and wine if they would like some while they are deciding about food.
  3. If they order drinks, go prepare drinks. When you bring the drink, ask them to see if they are ready to order. They are ready, take the order. If they are not, come back later or wait until they are ready. 
  4. After taking an order, the server has to repeat the order back to the customer to make sure that everything is correct.
  5. Before leaving the table ask them to make sure that they want the food in a normal sequence. Starter (Appetizer, Salad, Soup) >> Main course (Noodles, Curry, A La carte, BBQ) >> Dessert. Because some people prefer to have everything together at the same time and some people have a starter as a main course.
  6. Then put the order in the system, and before sending it to the kitchen, make sure to put it correctly and put every detail about how they like the food to be. For example, if they want everything at the same time, make sure you comment on the food. If customers have food allergies, make sure you comment on the food.
  7. When food is ready, make sure that the food is prepared correctly as you comment before bringing it to the table. If it’s correct, then bring it to the table. If it’s not correct, tell the kitchen staff to fix it for you.
  8. Server always keeps an eye on the water and fills it up when it is need. While you are filling up the water, ask them to see if the food is okay or need any condiment alongside with the food.
  9. If the customer ordered drinks and they are almost finished, ask them if they want another glass of wine or beer. Upselling it!
  10. If they finished the food, take the dirty plates back to the kitchen to clean it. Before taking it, ask them first to see if you can take it.
  11. If the server sees the customer finished all dishes, the server will ask for the dessert. If they order dessert, then put the order in the system.
  12. If the customer is all done, then bring the bill to the table.
  13. Keep an eye on the bill. If they put cash, ask them if they need some change? If they don’t need change, you don’t have to come back. Then make a payment, and make sure it is the right table.
  14. If they pay with a credit card, take it and make a payment. Before making a payment, make sure it is the right table.
  15. After making a payment, bring it back to the table, and say thank you for coming. Give them a small talk or some recommendation.
  16. Server must keep an eye on the customer, in case they need help with anything.
  17. Lastly, before customers leave, say thank you for coming

Packer Workflow

  1. Receiving the order from the printer
  2. Check the ticket and see if it’s online, and from which services?
    1. If it’s from smiledining, the packer has to confirm the order via the computer and send the estimated time to the customer.
    2. If it’s from a 3rd party application like UberEat, Doordash or Grubhub, the packer has to confirm the order via the tablet and adjust the estimated time to make sure that we can finish the order before the estimated time.
  3. Check the ticket and see if there’s any drinks or ice cream? If there’s a drink or ice cream with the order, write it down on the top right corner to make sure the hostess and the server see it when they are handing the order to the driver or customers.
  4. Check the ticket and see if there is any rice? If there is some rice with the order, the packer has to go get the rice or ask your colleagues to get it for you if you are busy.
  5. When the order is ready, start packing by tape the ticket on the bag.
  6. Then put the order in the bag by using the proper bag. Make sure it’s not too heavy. If it’s too heavy, double bags or use the bigger bag even if it’s just a few items.  
  7. After putting items in the bag, mark or highlight the items that you’re already put it in. So other people can help you pack, and they know what is in the bag or what is still waiting because we work as a team.
  8. When putting order in the bag, do not lean or tilt the containers because the sauce may leak from the container. Especially curry and stir fried food that contain a lot of sauce.
  9. When putting the curry into the bag, make sure you organize and make it safe from tipping over. 
  10. When you finish packing, count the items in the bag to make sure that you don’t forget anything.
  11. After, double check that everything is packed, bring the bag to the pick up area.
  12. If it’s an online order, the packer must press ready to send the notification to the customers that their food is ready.
    1. If it’s from SmaileDining, press ready at the computer.
    2. If it’s from the 3rd party application, press ready on the tablets.
  13. If it’s a phone order, you may call the customers to let them know that their food is ready. In case, the customers ask for it.
